Do alternate texts on images and links help with getting better ranks or are they simply a visual thing?

Well in my opinion they do help to a certain extent + it does no harm in adding them, as long as you don't stuff them i.e.

also don't forget about the title attribute in your anchor text (much link the alt attributute for text links)
