What Questions Do I ask Support AFTER renting a Server?

All the information I can find online is about what to ask before you select a host...
But what sort of things should I be asking or requesting now that I've got the server?

I'm thinking of server security or configurations I should be asking them to check or enhance? Any pro tips on things I can get them do to?

They are already configuring backups and raid etc and have monitoring, but what else can they do for me?

I have a dedicated server with 2 firewalls, Armor Anywhere, Cisco Defence Orchestrator (CDO) via RackSpace.

I want to ask them to "Harden" my server, but what does that mean?

What kind of Backups should I ask for?

TLDR: I want to make sure I make the most of the knowledge and skills of my managed support.
